We connected with The CAFE team at Klippers Organic Acres to dig deeper into why they are using Anita’s Organic Flours in their baking and why they choose organic.

What is Klippers Organic Acres?

We are an organic farm, restaurant, marketplace/cafe, cidery, and accommodation destination located in Cawston, BC in the heart of the South Okanagan region. We use Anita’s Organic grains in our baking—our most popular—Row Fourteen’s Five Grain Sourdough which is offered weekly in the market.

Overall, at the heart of Klippers is the belief that sustainable, healthy, delicious food is essential! What began as a 5 acre organic farm 20 years ago has grown in to a 60 acre organic farm. As the years progress, we remain passionate about bringing a wide variety of fresh, season product to families in our community, local restaurants, and Vancouver farmers markets.

What is the farm’s origin story?

Klippers Organic was created by Kevin and Annamarie Klippenstein. Kevin has a history in the restaurant industry, and Annamarie grew up with organic farming. It was the perfect combination of passions! Annamarie’s parents Hans and Mary Forstbauer, are renowned in BC for pioneering organic farming methods, with the Forstbauer Natural Food Farm becoming one of BC’s FIRST practicing organic and biodynamic farms in 1977. Mary went on to become the founder and president of the Certified Organic Association of BC, pretend of the BC Association of Farmers Markets and advocate for GMO labelling. Needless to say, Annamarie came by her passion for organic farming honestly!

To dig even deeper into the Klipper’s story, why is being organic in all that you do so important to you?

When Klippers was founded in 2001, it was with the belief that food should be organic, fresh, and grown free of pesticides or genetic modification – just as nature intended. Our fruits and vegetables are farmed organically and harvested at peak ripeness to preserve freshness, taste, and nutritional value. The planet needs everyone’s help to remain healthy and sustainable. This is why we believe in supporting biodiversity, local economies, treading gently on the earth, and giving back to our communities so all children have a brighter future.

I choose to bake with 100% organic ingredients because I truly believe it is the only way that makes sense.

Why did you choose Anita’s Organic flours for your bakery?

Head Baker, Giselle:
I choose, and prefer to bake with organic ingredients whenever possible because I truly believe it is the only way that makes sense-it’s healthier for us and the environment. The choices we make matter and this is my small way of contributing to a better more sustainable world. As well as working at Klippers, I work at a bean to bar chocolate shop and had a cake business in Vancouver. That is where I really gained an understanding of the importance of connecting with where your food comes from. I really love that Anita’s is all organic as well as accessible to the larger public. Here at the Klippers Marketplace we use Anita’s Unbleached Organic All Purpose flour in many of our pastries including our breakfast sandwich buns and our cinnamon buns.

Head Cook, Mai:
Learning about organic food started here at Klippers for me, but now I understand and am definitely on board.

Apprentice, Max:
I would say I am just starting my journey with understanding why choosing organic matters. I definitely feel like it makes a lot of sense, and am excited to learn more during my apprenticeship here.
