Oats add a natural sweetness to foods. Because oats are rich in antioxidants, breads, cookies, and other goods made with oats have a longer shelf-life. Nutrients most abundant in oats are protein (up to 15%), calcium, iron, potassium, vitamin A, thiamin, and pantothenic acid.
Oat flour is made from ground oat groats and as such contains very little gluten, so it may need to be combined with other flours if bread is wanted. It can be useful for some people suffering from coeliac disease, though it is not completely free of gluten.
Canada
Oat is a cereal that does not contain salt or cholesterol, it is rich in hydro soluble fibers, vitamins B1, B2 and D, minerals (such as magnesium, selenium, iron and manganese), carbon hydrants, lecithin, nucleic acids, enzymes and a hormone similar to folliculine. These give oat diuretic, remineralizant and antiasthmatic properties.
