Anita's Organic Red Lentils are not split and remain whole within the peel and have a more subtle pinkish outside colour. They take only slightly longer to cook than split red lentils (30 to 35 minutes total time) and will not disappear or soften as much as split red lentils.

Anita's Organic sells whole flaxseed that can be ground fresh easily as needed. The body cannot absorb the healthful benefits of the essential fatty acids found in the oil of flaxseed until the flaxseed is ground. When ground, flaxseed is subject to rapid oxidization leading to rancidity. Oxidization is prevented naturally by keeping the flaxseed whole until just before use. Whether ground or whole, flaxseed is a rich source of fiber.
Although Anita's Organic Brown Flaxseed and Anita's Organic Golden Flaxseed vary in colour they are equally high in nutrition. However, good manufacturing processes are in place to minimize cross-contamination between gluten-containing flours and grains and products that do not naturally contain gluten. Anita's Organic does offer certified gluten-free Brown Rice Flour in 11.34kg (25lb) bags. This comes to us as a gluten-free product and because we do not unseal the bag we maintain its gluten-free status.

Many people with wheat sensitivities can often tolerate simpler non-hybrid ancient grains, particularly Anita's Organic Spelt products and Anita's Organic Kamut® products. The gluten structure of Spelt and Kamut® is water-soluble, a different chemistry than harder to digest fat-soluble gluten found in wheat and most other gluten-containing grains. This simple water-soluble gluten structure can often be tolerated by those sensitive to wheat. Individual tolerances can vary from person to person - sometimes Spelt is tolerated whereas Kamut® is not, and for others the reverse is true.
