Christmas in a Cupcake

cupcakes-webAt first I was a little skeptical about these cupcakes as a lot of people are put off by the thought (and taste) of a traditional Christmas Cake.  However; the finished result was just fabulous. The cake itself was light and fruity with all the elements of Christmas one would expect. They can also be made for a more adult pallet by soaking the fruit in brandy instead of orange juice.  The fruit does need to be soaked in advance so a little preparation is needed. Decoration is optional and can be as elaborate as you wish but the simple Orange Zest Drizzle really enhanced the flavour. Have fun.

Ingredients (Makes 12 cupcakes)
  • ½ cup Anita’s Organic Cranberries
  • ½ cup Anita’s Organic Dates, chopped
  • ½ cup Anita’s Organic Sultanas
  • ½ cup Anita’s Organic Thompson Raisins
  • ½ cup organic orange juice (or brandy)
  • 1 tbsp Anita’s Organic Flax Meal
  • 4 tbsp water
  • ½ cup neutral tasting oil (sunflower; canola etc)
  • 1/4 cup Anita’s Organic Light Brown Sugar
  • ¼ cup Anita’s Organic Pecans, chopped
  • ¼ cup Anita’s Organic Walnuts, chopped
  • 1 cup Anita’s Organic Whole Wheat Pastry Flour
  • 1 tsp ground allspice
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 tsp nutmeg

Ingredients:
  • 1 cup Anita’s Organic Old Fashioned Rolled Oats
  • 1 cup Anita’s Organic Spelt Flakes
  • 1 cup Anita’s Organic Kamut Flakes
  • 1 cup Anita’s Organic Rye Flakes
  • 1 cup Anita’s Organic Barley Flakes
  • 3 cups Anita’s Organic mixed nuts; roughly chopped (I used brazil nuts, pecans, walnuts & hazelnuts
  • 1 cup Anita’s Organic raw sunflower seeds
  • ¾ cup Anita’s Organic unhulled sesame seeds
  • ½ cup Anita’s Organic Light Brown Sugar
  • 2 tsp cinnamon
  • 1 tsp ground ginger
  • ½ tsp ground cardamom
  • ½ tsp ground nutmeg
  • Pinch of Himalayan Sea Salt
  • ¾ cup organic applesauce
  • 1/3 cup organic brown rice syrup
  • 1/4 cup organic maple syrup
  • 2 tbsp olive or other neutral tasting oil
  • 1 cup Anita’s Organic Dried Apricots, chopped
  • 1 cup Anita’s Organic Conandria Figs, chopped
  • ½ cup Anita’s Organic Cacao Nibs

Ahhhh, nothing quite beats the smell of freshly made muffins first thing in the morning. A fabulous treat to start your day, or maybe even to accompany that mid-morning caffeine fix. This recipe is jam packed (yes, pun intended) with whole grain goodness and perfect for any time of the day, though the best time is warm from the oven!

Ingredients:
  • 2 tbsp ground flaxseed (equivalent to 2 eggs)
  • 6 tbsp water
  • 2 cups Anita’s Oat Bran
  • 1 cup Anita’s Whole Wheat Pastry Flour
  • ½ cup firmly packed light or dark brown sugar
  • 4 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp salt

The red fife makes a sweet and nutty crust, with a firm cookie texture. Not too sweet, it can be eaten for breakfast, too.

Ingredients:
  • 1 ¼ cup Red Fife Whole Wheat Flour
  • ½ cup All Purpose flour
  • 2 Tablespoons Maple Sugar
  • ¾ Teaspoon Baking Soda
  • ½ Teaspoon Sea Salt
  • 10 Tablespoons Butter, cold
  • 1 Large Egg Yolk
  • ¼ Cup Whole Milk Yogurt
  • 1 – 2 Tablespoons Cold Water

Filling Ingredients:

  • ¼ Cup Toasted and
  • Ground Almonds
  • ¼ Cup Toasted and
  • Ground Walnuts
  • 5 Medium Apples
  • ¾ Cup Maple Sugar
  • ½ Teaspoon Cinnamon
  • Squeeze of lemon juice
  • ¼ Cup Maple Syrup

Granola is an easy and healthy way to start your day. Mix a ¼ cup in with yogurt and fruit each morning and you are off to the races. This recipe makes a nice holiday gift when packaged in glass jars with a ribbon. If you really feel like going all out print the ingredients on a label and place it on the jar. This is the recipe I like but feel free to vary the amounts and nut selection. Everything on this list you can find in our store!

Ingredients:
  • 4 cups rolled oats
  • 1 cup sunflower seeds
  • 1 cup pumpkin seeds
  • 1 cup almonds
  • ½ cup pecans
  • ½ cup walnuts
  • ½ cup hemp hearts
  • ½ cup chia seeds
  • ½ teaspoons salt
  • 1/4 cup maple syrup
  • 3/4 cup honey
  • ½ cup coconut butter
  • ¼ cup coconut water
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • ½ teaspoons salt
  • 1 ½ cups chopped medjool dates
  • ½ cup of cacoa nibs

Ingredients:
  • 4 cups diced apples cored
  • 1 cup sugar
  • 2 eggs, lightly beaten
  • 1/2 cup vegetable or corn oil
  • 2 teaspoons vanilla extract
  • 2 cups Anita’s Organic whole wheat flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon sea salt
  • 1 cup Thompson raisins
  • 1 cup coarsely chopped walnuts
  • Preheat oven to 325 degrees. Line 16 muffin
  • cups with grease or paper liners
Directions:

In a large bowl mix the apples and sugar and set aside. In another bowl place the eggs, oil and vanilla and whisk till combined. In separate bowl mix flour, baking soda, cinnamon and salt and whisk till ingredients are evenly distributed. Stir the egg mixture into the apples/ sugar combination and mix thoroughly. Sprinkle the flour mixture over and mix well. Add the raisins and walnuts and mix until evenly distributed. Scoop batter evenly into muffin tins and bake for 25 minutes or until toothpick or knife comes out clean.

  • 1 ½ cups organic Sucanat
  • 4 eggs, lightly beaten

  • 1 Tbsp. aluminum-free baking powder
  • 1 tsp. sea salt
  • ¾ cup organic cocoa powder
