Whole Wheat Dinner Rolls
This loaf requires very little kneading and effort. Based on some of the recipes by Jim Lahey – the no knead king of bread making – the longer fermentation period helps to develop a fabulous flavour. This bread makes a delicious breakfast treat’ lightly toasted and spread with a little butter or coconut butter. ~J

Raw Pumpkin Cheesecake

Raw Pumpkin CheesecakeIf you are looking for a no fuss dessert this Thanksgiving, then look no further. This dessert is simple to make and a perfect dish to grace any dinner table. Taste the pumpkin filling mixture and the date caramel sauce as you are making them and add more pumpkin spice if you feel so inclined. Buy the cans of coconut milk (you will need 2 cans) a few days before you plan to make the cheesecake and keep them in the fridge. Also make sure you choose a brand that is organic and known to be very thick. We use Native Forest Coconut Milk. This will take time to set so its best to make the day before you need it. So Happy Thanksgiving and enjoy this scrumptious dairy free, grain free and egg free dessert. Yum!! ~J

Coconut Crusted Chocolate PieThis recipe is perfect for those hot summer days when you really don’t want to turn on the oven. It can be prepared in less than 30 minutes and just needs to be left alone to set in the fridge for a few hours. Decorate with your favourite mix of seasonal fresh fruit and a little whipped coconut cream. This pie is pretty rich so small slices will be enough for even the craziest of chocoholics. Bring to room temperature for about 10 to 15 minutes before serving for the perfect taste and texture experience. Enjoy! ~ J

Fig & Walnut Tea BreadI love using Einkorn flour but sadly don’t use it anywhere near as often as I should. It’s hard when you have 25+ flours to choose from – it’s like trying to pick a favourite child…impossible. This tea bread (tea as in great with a cup of tea) is a perfect way to use this delicious ancient grain. With fall most definitely in the air the last few days, after a crazy, long hot spring and summer this loaf is a great way to welcome in the changing seasons. Great as is or even better warm from the oven or slightly toasted with a little knob of butter and a cup of Earl Grey tea. How very civilised. Enjoy!

cranberry-walnut-pieThis Cranberry Walnut Pie will make a beautiful centre piece to any Thanksgiving table. Sweet and tart all at the same time and full of autumnal flavours it’s a winner all round. The temperature to cook the pie is quite high so if you know your oven has a tendency to be overly hot dial it back a notch as burnt cranberries are never a good thing! Serve with whipped coconut cream – yum – J

  • 1 cup Anita’s Organic Walnuts, coarsely ground
  • 340g fresh cranberries
  • ½ cup Anita’s Organic Sultana Raisins
  • ½ cup Anita’s Organic Cane Sugar

no-bake-peppermint-pattiesNo bakes – always a favourite here at Anita’s. Super speedy to make but always tasty and nutritious. This recipe is no exception and it almost has a dessert quality about it rather than granola/raw bar type feel. See what you think – J

Ingredients
  • 1 cup tightly packed, pitted Medjool dates (180 grams)
  • 1 cup rolled oats
  • 2 tbsp cocoa powder
  • ¼ cup hemp seed
  • ¼ tsp fine grain sea salt, or to taste
  • 2 tbsp water or milk or non-dairy milk
  • ½ tsp peppermint extract
  • ½ cup walnuts
