Fruity Coconut Squares

Fruity Coconut SquaresCrumble is always a perfect way to showcase all that is great about seasonal fruit. With buttery, crumbly oats and a hint of coconut you can’t go wrong. But how about making this traditional dessert portable! Crumble bars are a perfect way to take this traditional dessert with you on the go. The best type of berries to use are tart ones such as blueberries, raspberries and blackberries. Strawberries can be used but tend to release a little too much liquid. The jam is optional but intensifies the fruit flavour. Mix up those berries and enjoy! Enjoy! ~ J

Three Ingredient Granola Bars

These delicious granola bars are incredibly simple to make and take minimal effort. The fun is in the experimentation and mixing of flavours. Here at our Retail Store we have a selection of blends that are perfect for making these granola bars. Simply remember half of the 3 cups needed in this recipe should be some sort of flake blend, the rest, just mix them up as you wish. If you don’t have access to these blends just use 1 ½ cups of oats (or other flakes) and 1 ½ cups of a mixture of chopped nuts/seeds/dried fruit/coconut/chocolate chips etc. Or better still, just use 1 ½ cups of your favourite Anita’s Organic Breakfast Boost. For allergen friendly school snacks leave out nuts and replace with seeds instead. For a little extra yumminess drizzle with melted chocolate. Enjoy! ~ J

Ingredients (Makes 12 to 16 Bars)
  • 3 cups Anita’s Organic Blend (or 1 1/2 cups rolled oats & 1 /12 cups of mixed nuts/seeds and dried fruit)*
  • 1/2 cup nut (or seed) butter
  • 1/2 cup honey/brown rice syrup/agave nectar

*we used a mixture of our following blends – Kamut Flake Blend, Sunflower Seed Blend, Sprouted Quinoa Blend, High Fibre Blend, and Breakfast Boost Chia & Hemp.

Einkorn Apple CakeEinkorn Flour has a great taste and light texture so lends itself very well to many baking applications. So we started off with a delicious cake made from our Einkorn Flour that is fantastic on its own. But then we thought – can it be made any better – well of course. This moist cake can be taken up a notch and turned into an extra special dessert. Firstly we tried a simple glaze made from icing sugar and the leftover juice we squeezed out of the grated apple. Nice, perfectly ok, but not quite what we were looking for. Frosting? Maybe but not this time – so we tried this caramel sauce instead. Super yummy and easy to make and was just perfect. So here it is – try it with and without – see what you think. ~ Enjoy J

Ingredients
  • 2 tbsp chia seeds
  • 6 tbsp water
  • 1/4 cup Anita’s Organic Coconut Sugar
  • 1/3 cup Anita’s Organic Cane Sugar or Mascabado Sugar
  • 1/2 cup neutral tasting oil (sunflower/safflower etc)
  • 2 tbsp molasses
  • 1 tsp vanilla extract (or 1/2 tsp vanilla powder or seeds from 1 vanilla bean)
  • 1 1/4 cup apple (about 2 medium apples), peeled; cored; grated and squeezed (place grated apple into a sieve and squeeze out as much juice as possible)
  • 1 cup milk or non-dairy milk
  • 1 cup Anita’s Organic Einkorn Flour
  • 1/2 cup Anita’s Organic Spelt All Purpose White (or more Einkorn – the cake will be a little denser but still awesome)
  • 1 1/2 tsp baking soda
  • 1 tsp baking powder
  • 2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/2 cup Anita’s Organic Rolled or Quick Oats
  • 1/2 cup walnuts; chopped

Freezer Fruit Crumble

Still have some of last year’s berry crops in your freezer? Or do you have some apples (or pears) that are not quite their best languishing in the refrigerator? This dessert utilizes both into a delicious comforting dessert. The fruit combinations are easy to adapt to suit. Enjoy! ~J

Ingredients:

Fruit

  • 4 cups mixed frozen berries
  • 3 cups peeled and chopped apples (or pears)
  • 1/3 to 1/2 cup Anita’s Organic Brown Sugar (or dry sweetener of choice) Please note: amount of sugar needed will depend on the sweetness of the fruit being used. 

Crumble

  • 1 cup Anita’s Whole Wheat Pastry Flour
  • 1/3 to 1/2 cup Anita’s Organic Cane Sugar (or dry sweetener of choice) Please note: amount of sugar needed will depend on the sweetness of the fruit being used. 
  • ½ cup Anita’s Organic Rolled Oats
  • 2 tsp ground ginger
  • 1 tsp cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 2/3 cup Anita’s Organic Shredded Coconut
  • ½ cup butter (or non-dairy alternative), chilled.

Strawberry Crumble BarSo I couldn’t wait to try out my new batch of Strawberry Jam and this recipe was a perfect vehicle for it. Crumble has always been one of my favourite desserts, usually reserved for the colder months of the year, but a crumble bar is a perfect treat in the summer time. Perfect for lunches; picnics; and even afternoon tea. Enjoy – J

Ingredients
  • 1 cup Anita’s Organic Sprouted Kamut Flour
  • 1 ½ cups Anita’s Organic Rolled Oats
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup Anita’s Organic Cane Sugar (brown sugar or coconut sugar work well too)
  • 1 flax egg (1 tbsp Anita’s Organic Ground Flaxmeal mixed with 2 tbsp water and left to thicken)
  • ½ cup butter or non dairy alternative
  • ¼ cup maple syrup
  • 1 cup jam

Rhubarb and Strawberry Crumble with Emmer FlourOn a rainy Sunday, here in beautiful British Columbia, what better way to spend a day off but baking for your family. A perfect marriage of Anita’s Organic and The Local Harvest Market – Rhubarb & Strawberry Crumble made with our Emmer Flour. This was served with whipped coconut cream and sprinkled with chopped walnuts; a pinch of cinnamon; and lots of love. Enjoy!

Ingredients

  • 2 lbs rhubarb, sliced into ½ inch pieces
  • 1 lb strawberries, sliced
  • ½ to ¾ cup Anita’s Organic Cane Sugar (or dry sweetener of choice)

Crumble

  • ½ cup Anita’s Organic Can Sugar (or dry sweetener of choice)
  • ½ cup Anita’s Organic Rolled Oats
  • 2 tsp ground ginger
  • 2/3 cup Anita’s Organic Shredded Coconut
  • ½ cup butter (or non-dairy alternative), chilled.

no-bake-peppermint-pattiesNo bakes – always a favourite here at Anita’s. Super speedy to make but always tasty and nutritious. This recipe is no exception and it almost has a dessert quality about it rather than granola/raw bar type feel. See what you think – J

  • ¼ cup hemp seed
  • ¼ tsp fine grain sea salt, or to taste
  • 2 tbsp water or milk or non-dairy milk
  • ½ tsp peppermint extract
  • ½ cup walnuts

granola-bars-quinoaI’ve seen a few of these recipes flying around the internet recently so I thought I’d have a go and see what all the fuss was about. I have a little bit of a love hate relationship with quinoa – which is really due to my slap dash results when cooking it. I tend to avoid white quinoa – not that there is anything wrong with it, but I always seem to overcook it, so usually cook the red or black quinoas instead. But this recipe only toasts the grains giving them a lovely – well – toasty flavour! As with any type of raw bar or granola bar it’s pretty easy to swap out ingredients to suit dietary requirements/preferences as long as the ratios stay the same. I really enjoyed this bar as it had quite a toothy texture which left a definite feeling of satiety for quite some time. Enjoy – J
