Raw Balls

Raw BallsRaw balls are up there with granola bars when it comes to convenience and ease of preparation. All you need is a food processor and some delicious ingredients. Before you know it you have a nutritious on the go snack that is so easy to adapt to suit all tastes and most dietary preferences or restrictions. They can be made with just seeds and dried fruit if there are allergy restrictions but as seeds tend to be a little drier than nuts you may need to add a little more fruit to the mixture to make them hold together. The addition of a few tablespoons of seed butter can also help with this as well. This recipe does not include any nuts but they can be easily incorporated if required. Enjoy! ~ J

Ingredients
  • 2 cups Anita’s Organic Medjool or Deglet Noor Dates (Medjool are the softest)
  • 1 cup Anita’s Organic Breakfast Boost Chia & Hemp
  • 1/2 cup Anita’s Organic Sunflower Seed Blend
  • 1/2 cup Anita’s Organic Shredded Coconut
  • 1/4 cup Anita’s Organic High Fibre Blend
  • 1/4 cup Anita’s Organic Sprouted Quinoa Blend
  • 3 tbsp cocoa powder
  • 1/4 tsp sea salt
  • 1/2 tsp vanilla powder
  • 2 to 4 tbsp coconut butter (or other nut/seed butter)
  • Extra coconut for dusting (optional)

Breakfast Boost Brownies

No bake treats are always a go to in our house. With no cooking and minimal washing up they can be ready in a matter of minutes. The only time you have to wait for these delicious morsels is the time it takes them to set up in the fridge. But if you can wait an hour then give them a go. Just like most raw bar recipes they can easily be adapted to suit taste, diet and allergy requirements. These are made with our Chia & Hemp Breakfast Boost and sooo delicious. Enjoy!

Mike’s Date Squares

Mike's Date SquaresThe Local Harvest Bistro resident Chef Mike has been kind enough to share his (up until now) oh so secret recipe for Date Squares. These traditional squares make a great addition to any occasion but have a definite festive comfort about them. The recipe is simple but if you don’t feel like baking them yourself pop on down to the Bistro and buy some through the month of December. -J

Ingredients

Filling recipe:

  • 1 pkg Medjool dates
  • 1 cup water
  • 2 tbsp lemon juice
  • 2 tbsp brown sugar
  • 1/2 tsp baking soda

Crisp Recipe:

  • 2 1/2 cup quick rolled oats
  • 1 cup flour
  • 3/4 cup brown sugar
  • 1/4 tsp baking powder
  • 3/4 cup softened butter

Organic Moroccan Emmer Salad with Roasted TomatoesThis beautiful salad has a very exotic feel about it. The blend of the sweetness and savoury with a touch of spice in the background makes it a great dish any time of year.

Ingredients
  • 2 to 2 ½ cups Anita’s Organic Emmer Kernels, cooked (1 cup uncooked grain yields enough for this salad)
  • 3 to 4 cup cooked Anita’s Organic Garbanzo Beans
  • 2/3 cup Anita’s Organic Almonds, roasted
  • 6 large tomatoes, sliced
  • 6 Anita’s Organic Medjool Dates, pitted and chopped
  • 2 garlic cloves, minced
  • 1/3 cup olive oil
  • 3 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1 tsp paprika
  • salt & pepper to taste

  • 1 cup tightly packed, pitted Medjool dates (180 grams)
  • 1 cup rolled oats
  • 2 tbsp cocoa powder
  • ¼ cup hemp seed
  • ¼ tsp fine grain sea salt, or to taste
  • 2 tbsp water or milk or non-dairy milk
  • ½ tsp peppermint extract
  • ½ cup walnuts

On the Go Energy Bars

energybars-webWhat did we do before some bright spark invented raw bars?? I don’t know but what I do know is that I can’t get enough of these little beauties. Ready in a flash and super tasty these energy bars are good for any one on the go. The fruit; nut; and seed combinations can be easily adapted to suit your palette or dietary requirements, though I would recommend giving this one a go first. They are good in the fridge for at least a week (if they last that long). So what are you waiting for – grab that food processor and let’s make some raw bars – J

If you are looking for something to pull together quickly for an afternoon tea; a lunchbox treat or a snack on the go these brownies are divine! Most raw recipes call for nuts but for those of us with allergies this recipe works just fine!

Ingredients:
  • ½ cup Anita’s Organic Pumpkin Seeds
  • ½ cup Anita’s Organic Sunflower Seeds
  • ½ cup Anita’s Organic Hulled Hemp Seed
  • ½ cup Anita’s Organic Unsweetened Shredded Coconut
  • 3 tbsp Anita’s Organic Cacao Powder
  • ½ tsp cinnamon
