Anita's Organic fruit and nut cookieCookies, cookies, cookies. Just how many recipes for cookies does one person need? Well lots in fact. Why not? It’s the perfect excuse to bake cookies – why wouldn’t you want to try that new recipe! These delicious cookies are a little like an oatmeal cookie but with a bit of fall/winter thrown in. The extra fruit and nuts give a little more bite and the cranberries and currants give some tartness to this sweet little creation. But it’s not too sweet. This cookie is not your full-on indulgent toffee/chocolate/rocky road type cookie with tooth-aching sweetness. It’s a perfect ‘with your morning coffee’ type of cookie or a great after school snack. But if you really can’t have a cookie without chocolate then feel free to throw in a handful or two of chocolate chips. The Spelt and Emmer Flours are easily interchangeable so if you don’t have Emmer Flour then use either our Fine Grind or Sprouted Spelt flour. Don’t have All Purpose Spelt Flour then you can use regular All Purpose Flour or just go for full on 100% whole grain and use more of the Emmer Flour and or Spelt Fine Grind (or Sprouted Spelt). This may alter the texture slightly but the taste will still be there. Enjoy! ~J

Ingredients
  • 2 tbsp Anita’s Organic Flaxmeal
  • 5 tbsp water
  • 1 3/4 cups Anita’s Organic Spelt Flakes
  • 1/3 cup Anita’s Organic Emmer Flour
  • 1/2 cup Anita’s Organic All Purpose White Spelt Flour
  • 1/4 cup Anita’s Organic Brown or Coconut Sugar
  • 1/4 cup Anita’s Organic Cane Sugar
  • 1 tsp baking soda
  • 1/2 tsp vanilla powder (or 1 tsp extract or seeds scraped from 1 whole vanilla bean)
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 cup cashews, chopped
  • 1/4 cup brazil nuts, chopped
  • 1/4 cup cranberries
  • 1/4 cup currant raisins
  • 2 tbsp hemp seed
  • 1/2 cup organic coconut oil, melted
  • 3 tbsp maple syrup

Spelt Apple & Blackberry Pie

It’s Pie Season and what better way to celebrate than with an apple and blackberry one. You can use more or less All Purpose Spelt Flour if you wish. The more white flour that is used the lighter the crust will be. Start off with this 50/50 ratio and see what you think. We like the slightly heavier, tastier crust that adding whole grain flours produce. Enjoy! ~ J

Ingredients
Makes 1 crust (repeat recipe to make the top crust)

Filling

  • 3 cups tart apples, peeled, cored and sliced
  • 3 cups blackberries
  • 1/2 cup sugar
  • 4 tbsp corn starch
  • 1 tsp cinnamon

Cheese Baby Greens Savoury MuffinsMuffins – so many parameters and connation’s for this popular pastry item. From the streusel topped fruit muffins; power packed breakfast muffins to our new favourite – savoury muffins. They make a great accompaniment to soups; stews and chili’s or just on their own warm from the oven with a touch of butter. They are a great way to get kids to eat vegetables (and reluctant adults too) and make a perfect portable lunch item! Try different vegetables – grated carrots and zucchini; sundried tomato and olives. Just remember that vegetables with a high moisture content need to have the juice squeezed out or the muffin batter will be too wet . Any leftover vegetable pulp from juicing this morning?? Don’t waste it – try using it in a savoury muffin. ~ Enjoy! J

Ingredients
  • 1 tbsp chia seeds
  • 3 tbsp water
  • 1 1/2 cups non -dairy milk
  • 1 tsp apple cider vinegar
  • 1/4 cup olive oil
  • 1 cup baby greens, tightly packed and chopped finely (we used baby kale; chard and spinach)
  • 3/4 cup non-dairy ‘cheese’ (or regular if no dietary restrictions)
  • 1 cup Anita’s Organic Spelt Flour (Fine Grind or Sprouted) or Anita’s Organic Emmer Flour
  • 1 cup Anita’s Organic Spelt (All Purpose White Spelt)
  • 1/3 cup nutritional yeast
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp garlic powder
  • 2 tsp yellow mustard powder
  • 1/2 tsp freshly ground black pepper

Banana Muffins & Banana LoafBanana’s like avocados seem to have two levels of ripeness in our house – rock hard and inedible or ‘oh my goodness I have to use this today’. Those overripe bananas that don’t end up in the freezer for smoothies inevitably become one of the many Banana Chocolate Chip Muffin or Loaf recipes that fill my recipe collection. Thankfully they are the family favourite, go to muffin so that’s a good thing with my banana management skills. Here I have used a mixture of Fine Grind Spelt Flour and White All Purpose Spelt Flour. The recipe can easily be adjusted to use more or all whole grain spelt flour and or Emmer Flour as well. Or if whole grain spelt flour isn’t your thing just use all white. I like this 50/50 mixture but vary the amounts of the whole grain spelt frequently. The textures will vary depending on the ratios you use but all equally as delicious no matter what you choose. ~ Enjoy! J

Sprouted Whole Wheat Breakfast Cookies

Ingredients (Makes 24 to 30 cookies)
  • 1 cup nut butter of choice
  • 1/4 cup sunflower oil (or other neutral tasting oil)
  • 1/4 cup milk (regular or non-dairy)
  • 1/2 cup Anita’s Organic Cane Sugar
  • 1/2 cup Anita’s Organic Brown Sugar
  • 1 tsp vanilla powder (or 2 tsp extract)
  • 1 cup Anita’s Organic Sprouted Whole Wheat Flour
  • 1 cup Anita’s Organic All Purpose Flour or All Purpose Spelt Flour
  • 2 cups Anita’s Organic Harvest Flake Mix
  • 1/4 cup milk (this is added later)
  • 1 tsp non-alum baking powder
  • 1/2 tsp sea salt
  • 1 cup Anita’s Organic Currant Raisins

Savoury Sprouted Spelt BiscuitsThese hearty savoury biscuits are robust enough to ‘dunk’ in soups and stews but still have a light texture. Add some non-dairy or regular cheese for a little something extra. Enjoy! ~J

 Ingredients
  • 1 cup Anita’s Organic Sprouted Spelt Flour
  • 1 cup Anita’s Organic All Purpose White Spelt Flour
  • 1 tbsp baking powder
  • 1/2 tsp Himalayan Salt
  • 2 tbsp Nutritional Yeast
  • 1 tsp dry mustard powder
  • 1/2 tsp black pepper
  • 1 tsp dried herbs (parsley works well)
  • 1/3 cup coconut oil, solid (not liquid)
  • 1/2 cup non-dairy cheese (or regular sharp cheese) – optional
  • 3/4 cup non-dairy milk (or regular)

Chocolate & Coconut Brownies

Who doesn’t like a rich gooey chocolate brownie, still warm from the oven, accompanied by a lovely scoop of vanilla ice cream? With a mixture of Sprouted Whole Wheat Flour and White Spelt Flour this brownie is just the ticket. Coconut chips replace the more traditional walnuts in this recipe but can easily be subbed out. For a cakier version cook for a few minutes longer until cooked all the way through. Enjoy! ~J

  • 1/2 cup Anita’s Organic Sprouted Whole Wheat Flour
