Anita's Organic fruit and nut cookieCookies, cookies, cookies. Just how many recipes for cookies does one person need? Well lots in fact. Why not? It’s the perfect excuse to bake cookies – why wouldn’t you want to try that new recipe! These delicious cookies are a little like an oatmeal cookie but with a bit of fall/winter thrown in. The extra fruit and nuts give a little more bite and the cranberries and currants give some tartness to this sweet little creation. But it’s not too sweet. This cookie is not your full-on indulgent toffee/chocolate/rocky road type cookie with tooth-aching sweetness. It’s a perfect ‘with your morning coffee’ type of cookie or a great after school snack. But if you really can’t have a cookie without chocolate then feel free to throw in a handful or two of chocolate chips. The Spelt and Emmer Flours are easily interchangeable so if you don’t have Emmer Flour then use either our Fine Grind or Sprouted Spelt flour. Don’t have All Purpose Spelt Flour then you can use regular All Purpose Flour or just go for full on 100% whole grain and use more of the Emmer Flour and or Spelt Fine Grind (or Sprouted Spelt). This may alter the texture slightly but the taste will still be there. Enjoy! ~J

  • 2 tbsp Anita’s Organic Flaxmeal
  • 5 tbsp water
  • 1 3/4 cups Anita’s Organic Spelt Flakes
  • 1/3 cup Anita’s Organic Emmer Flour
  • 1/2 cup Anita’s Organic All Purpose White Spelt Flour
  • 1/4 cup Anita’s Organic Brown or Coconut Sugar
  • 1/4 cup Anita’s Organic Cane Sugar
  • 1 tsp baking soda
  • 1/2 tsp vanilla powder (or 1 tsp extract or seeds scraped from 1 whole vanilla bean)
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 cup cashews, chopped
  • 1/4 cup brazil nuts, chopped
  • 1/4 cup cranberries
  • 1/4 cup currant raisins
  • 2 tbsp hemp seed
  • 1/2 cup organic coconut oil, melted
  • 3 tbsp maple syrup


Cranberry Chocolate Coffee CakeCrumb cakes are always a favourite at coffee time here at Anita’s Organic and this version is no exception. We’ve added a few little seasonal treats and flavours to this crumb cake to elevate its position on the festive dessert table. With warm melty chocolate chips, a buttery cinnamon crumb topping and fresh tart cranberries to contrast the sweetness and add some festive zing. This cake makes a great addition to a festive brunch menu or as a perfect accompaniment to a hot coffee after a long day hitting the malls. Enjoy! ~J

Beer Battered French Toast

We love to re-purpose our mixes to make new and exciting recipes but sometimes simplicity is the best. Here we took our Ancient Grain Pancake Mix and used it to make a delicious beer batter for French Toast. A good tasting beer adds a delicious richness to the French Toast but you can sub it for sparkling water instead. Enjoy ~J


French Toast

  • 2 cups Anita’s Organic Ancient Grain Pancake Mix
  • 1 tsp cinnamon
  • 1/2 tsp vanilla powder (or 1 tsp extract)
  • 2 tbsp neutral tasting oil
  • 1.5 tbsp maple syrup
  • 1/3 cup non – dairy milk (or regular)
  • 355ml can good tasting beer (sub for sparkling water for child friendly version)
  • 8 slices of day old sourdough bread
  • Coconut oil (for frying)

Blueberry Compote

  • 1 cup frozen blueberries
  • 1 tsp maple syrup


Almond & Raspberry Thumbprint CookiesSummertime is well and truly upon us and like lots of parents I find myself ‘sans’ offspring for a few weeks while one is working away for the summer and the other off to camp for a few weeks. Freedom I hear you all cry! So what exciting things might I get up to? Well quite frankly life continues as normal, there’s still work to do and even more chores (as there are no children around to put to work). Puppies still need looking after and of course I still need to bake. But as my allergy plagued child is away I can experiment with some ingredients I wouldn’t normally use which is kind of fun ;-) So these nut filled beauties (sorry baby girl) were a big hit with everyone who tried them. The combination of the not too sweet cookie; nuts and tart raspberry jam made them a lovely treat. Enjoy – J

  • 2 cup Anita’s Organic Barley Flour
  • 1 1/3 cups Anita’s Organic Raw Almonds, roughly ground (pulse a few times in a food processor)
  • 1 tsp Ceylon cinnamon
  • ½ tsp vanilla powder (or 1 tsp vanilla extract)
  • ½ tsp sea salt
  • ½ cup neutral tasting oil (canola; grapeseed; safflower; coconut)
  • ½ cup maple syrup (# 3 grade tastes divine in this recipe)
  • Raspberry jam – or another tart jam


Here is a simple way to combine our fabulous new Morning Rush Instant Oatmeal with another traditional breakfast staple – the muffin. Packed full of oaty goodness, dried fruit, nuts and delicate spices this muffin is a perfect mid-morning pick up or an on the go breakfast. Happy days – J

Dry Ingredients

Morning Rush Raisin Spice Muffin


  • 1 cup Anita’s Organic Old Fashioned Rolled Oats
  • 1 cup Anita’s Organic Spelt Flakes
  • 1 cup Anita’s Organic Kamut Flakes
  • 1 cup Anita’s Organic Rye Flakes
  • 1 cup Anita’s Organic Barley Flakes
  • 3 cups Anita’s Organic mixed nuts; roughly chopped (I used brazil nuts, pecans, walnuts & hazelnuts
  • 1 cup Anita’s Organic raw sunflower seeds
  • ¾ cup Anita’s Organic unhulled sesame seeds
  • ½ cup Anita’s Organic Light Brown Sugar
  • 2 tsp cinnamon
  • 1 tsp ground ginger
  • ½ tsp ground cardamom
  • ½ tsp ground nutmeg
  • Pinch of Himalayan Sea Salt
  • ¾ cup organic applesauce
  • 1/3 cup organic brown rice syrup
  • 1/4 cup organic maple syrup
  • 2 tbsp olive or other neutral tasting oil
  • 1 cup Anita’s Organic Dried Apricots, chopped
  • 1 cup Anita’s Organic Conandria Figs, chopped
  • ½ cup Anita’s Organic Cacao Nibs


If you are looking for something to pull together quickly for an afternoon tea; a lunchbox treat or a snack on the go these brownies are divine! Most raw recipes call for nuts but for those of us with allergies this recipe works just fine!

  • ½ cup Anita’s Organic Pumpkin Seeds
  • ½ cup Anita’s Organic Sunflower Seeds
  • ½ cup Anita’s Organic Hulled Hemp Seed
  • ½ cup Anita’s Organic Unsweetened Shredded Coconut
  • 3 tbsp Anita’s Organic Cacao Powder
  • ½ tsp cinnamon


  • ½ cup Canola oil
  • ½ – ¾ cup coconut sugar
  • 1 egg
  • 1/ ½ tsp vanilla extract
  • 2 cups Anita’s Organic Kamut Flour
  • 2/4 tsp Anita’s Organic Baking Powder
  • 1 cup Anita’s Organic Kamut Flakes
  • ¼ tsp Himalayan Salt
  • ½ tsp Cinnamon


  • 1 ¼ cups non-dairy milk (I used organic almond milk)
  • 2 tsp apple cider vinegar
  • 2 tbsp canola or other neutral tasting oil
  • 1 tsp vanilla extract
  • 1 ½ cups Anita’s Organic Emmer Flour
  • 1 ½ cups Anita’s Organic All-Purpose Unbleached Flour
  • 2 tsp cinnamon
  • 2 tbsp non-alum organic baking powder
  • ½ tsp sea salt



For Mincemeat:

  • 1lb/454g tart apples, peeled, cored and finely chopped (or grated)
  • 8 oz/227g vegetable suet (if you can find it) or 6oz of vegan ‘butter’ melted
  • 6oz/170g Anita’s Organic Thompson Raisins
  • 6oz/170g Anita’s Organic Sultana Raisins
  • 8oz/227g Anita’s Organic Unsulphured Turkish Apricots
  • 12oz/340g Anita’s Organic Light Brown Sugar
  • Grated rind and juice of 2 oranges & 2 lemons
  • 2oz/60g whole almonds, chopped (omit for nut free version)
  • 4 tsp ground all spice
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg – freshly ground is best
  • 6 tbsp brandy

For Pie Pastry:

  • 2 cups Anita’s Organic All Purpose Unbleached White Flour
  • ¾ cup vegan butter/solid fat of choice
  • Pinch salt
  • ¼ cup ice cold water (approx)

Place all the ingredients in a heavy based pot and bring to the boil. Turn down heat and simmer on low for approximately 30 minutes, stirring frequently. The mixture is ready when it is thick and gooey with a jam like consistency and the apples are cooked through. If using within a week or two, the mincemeat can be kept in an airtight container in the fridge. Freezing works well but for longer storage use a preferred canning method.
